Microwave Cheddar to Make Keto Cheese Chips– No carbs, 1 Ingredient.
Microwave cheese: it’s a thing. I’ve always loved melting cheese, and recently I over-zapped some cheddar and it turned into a chip. What a happy mistake! It’s become my favorite snack at the beach. So simple and SO good. I’ve tried it with a variety of different kinds of cheese, and cheddar is the safest bet.
Not only simple, this snack is easy, fast and fun. It’s one ingredient and zero mess. It’s good either hot or refrigerated for next day. The chips taste like cheese straws, but they’re keto-compliant, meaning no carbs.
What is that 1 ingredient? You may have guessed it. It’s shredded cheddar.
The process is simple.
All you do is spread the shredded cheddar out so it’s flat in the middle unless you want a gooey doughnut effect. Then you put the plate in the microwave for about a couple minutes, or however long it takes until you hear sizzling and see the bubbling (probably at least 90 seconds if not two minutes). At that point the bottom will probably be hard enough to flip. Then you flip the cheese on the plate, and heat for another 90-120 seconds. Et voila! Keto cheddar chips
One reason I’m not so specific about time is that microwaves can also be different in terms of their strength, depending on how old they are. If your microwave is really strong, I would say test it one minute at a time and then look to see what’s going on. If it’s not bubbling yet, then shut the door and tap another 30 seconds.
To give you an idea of how much you can get out of this, one bag of shredded Kraft Cheddar cheese can give you two full-sized plates.

- It’s great either directly off the hot plate or the next day served chilled.

So I tried Keto for about a month and couldn’t do it anymore because of the time it needs to prep everything. I need a keto grocery store and keto restaurants! Have you tried the “chips” with any kind of dip?

Hi Jamie! I understand what you mean. Doing any kind of elimination diet can be time-consuming. When you say “the time it took to prepare everything,” do you mean you prepared each meal right before you ate it? Because if every time you wanted to eat, you had to cook and then clean, that would be a nightmare for anyone. I wouldn’t do it. Otherwise, if you can cook & then have at least 3-4 microwavable meals leftover, then it’s totally worth it. Or it is for me.
Regarding your first need, I have some good news. You do NOT need a Keto grocery store. 🙂 I don’t use one. I don’t even know of any. You can get what you need from Harris Teeter, and probably Food Lion as well. Check labels to be mindful of carbs. Also, try to avoid canola oil when possible. I also make sure I avoid any kind of skim or fat-reduced cheese. And don’t forget about Amazon…
And I have MORE good news. As for restaurants, you can CREATE Keto options. It likely won’t be as good as what you can make at home, but you’d be totally fine if, say, you go to a Mexican restaurant and you order Fajitas without the tortilla, beans or rice. The meat/chicken, guacamole & (full-fat) sour creme would get the job done. Just make sure you also stay away from the chips and margaritas and any other sugary beverage. You could also go to a pizza parlor, order a supreme pizza and then scrape off the toppings and toss out the bread.
Now I get that there could be scenarios such as work-related socials at a nice restaurant in which you might not feel comfortable being a total stickler in front of your boss or some important client. In those cases, I’d just pick the closest thing to Keto that the menu has to offer (steak or any kind of fatty fish) without asking the waiter a million questions, and then try to push any potentially non-Keto stuff off to the side. Overall, though, Keto offers a lot more flexibility than what many people might think.
Have I tried dip? No, not yet, but that’s a great idea. I’m sure, though, that the avocado-based mayonnaise you can order from Amazon would be a great base for something like that. What I HAVE considered, but haven’t tried, is folding the cheese over while it’s still HOT and letting it harden into a taco shell. When I do that, I’ll post about it.
