And here’s another low carb happy accident in the kitchen! I was looking at all the delicious pictures of avocado toast while snacking on my microwaved cheese chips, and suddenly I had an “ah-hah” moment. Why not use these cheese chips to make low carb Keto avocado “toast?”
Low Carb…but JUST as delicious.
Doing the Keto diet, as opposed to the standard American diet, essentially means I sub out carbs for fat and protein as much as possible. High fat & high protein cheese chips are, in this case, the PERFECT substitute for the carb-rich bread. And as you might already know, these chips are DELICIOUS. Another great example of how high-fat, rather than high-carb, can be delicious.
And how do you do this avocado toast without the bread?
Peel an avocado and soften it in a bowl with your favorite seasonings. Add a little lemon to keep it from browning.
Then just use your favorite cheese, and make my fast microwave cheese chips. I like parmesan cheese or cheddar to best accompany avocado. You can also add lettuce, seasoning salt and whatever else you like.
